Northstar, an offshoot of Chateau Ste. Michelle, originally focused only on Merlot. Winemaker David "Merf" Merfield explains: 'We have 17 hours of daylight in the summer, and cool autumn nights - so the wines never have flab. Our problem is managing tannin, to avoid wine that need 10 years to become enjoyable. Most regions add Merlot to soften their Cabernet Sauvignon. In Washington we do the opposite.'
